Peas originally come from Western Asia and are actually legumes. They are packed with Vitamins A and K and are also high in fiber, protein and carbohydrates but low in fat. In fact, they only contain about 80 calories for every 100 grams.
Peas are best served cooked and used in purees, soups and dishes that need some thickening. Also, the protein in peas and the protein in grains complement each other and enhance their combined protein content.
Buying & Preparing Peas
When looking to buy peas choose the ones that look fresh, firm and bright green. Avoid buying flat or wilted pea pods because those are unripe.
When preparing peas, wash the pods first prior to cutting off the end. Pull away strings running down the side and then take out the peas. To keep them crispy, boil them quickly or stir-fry them.
How To Store Peas
When storing peas, they are best kept refrigerated but they need to be used quickly. If left unused for a long time the sugar in peas tend to turn to starch and they become less sweet. Also before storing them, do not wash them because damp pods are more prone to mold.
