Broccoli is an amazing food that is high in fiber and an excellent source of vitamin A, vitamin B vitamin and vitamin C. You will even get some vitamin E and K, which aid in the clotting of our blood as well as in balancing hormones.
 
Besides its rich vitamin content broccoli might actually protect against some forms of cancers. We don’t know why exactly, but it appears as if the Naturally occurring chemicals in broccoli and other cruciferous vegetables either prevent the formation of carcinogens in the body or at least block them from interacting with sensitive body tissues.
 
Now to get enough sulforaphane, which is one of the main compounds in broccoli that is believed to help with cancer, you would have to eat about two pounds a week. But don’t worry, broccoli seeds and broccoli sprouts contain a lot more sulforaphane. Five grams of three-day-old sprouts contain as much as 150 grams of normal broccoli, so you want to opt for the sprouts if cancer prevention is your goal. 
 
 
Buying & Storing Broccoli
 
Always buy broccoli with tightly closed buds. The leaves should look fresh, and be brightly colored. As you know Broccoli is usually green, but a bit of purple is also fine. To go for broccoli that is yellow or turning yellow as this means its starting to go bad. 
 
You can store broccoli in the refrigerator when its wrapped in a plastic bad. There it’ll stay fresh for up to two weeks. But make sure its kept out of the light, which destroys the vitamin c. 
 
 
How To Prepare Broccoli
 
Broccoli should be rinsed off under cool water. Wash off any dirt and then put the broccoli into a pan of water. You can use salt water to drive out insects that are hiding in the florets.
 
After 15 minutes, cut off the leaves and trim away woody section of stalks. If you want your broccoli to cook faster, divide it up into small florets and cut the stalk into thin slices.
